New Feature! Dinner Recommendation: Tandoori Chicken Night

I thought I'd try a new Feature on the blog, Dinner Recommendations. This new feature with go over the main dish and sides. Sometimes making dinner plans can get a bit boring when planning for family meals. I know that I have to step out of the box sometimes and I'm going to share some of our meals with you!

Tandoori Chicken Night



Grilled Tandoori Chicken 
Grilled Squash and Zucchini Medley
 Side Salad

Grilled Tandoori Chicken
What You Need:
(8-10) Boneless, Skinless Chicken Thighs
(1) 5.3 Ounce Container Plain, Greek Yogurt
(1) Lemon, Zested and Juiced
(1/4) Cup Onion
(1/4) Cup EVOO
(1 1/2) Teaspoon Sea Salt
(1/4) Teaspoon Black Pepper
(1) Tablespoon Paprika
(2) Tablespoons Ground Cumin
(2) Teaspoons Ground Ginger
(1) Teaspoon Turmeric
(1/2) Teaspoon Ground Red Pepper
Cilantro for Garnish

Prepare the Marinade:
Place all ingredients other than chicken and cilantro into a blender processing until smooth. Pour into a large ziploc bag with chicken. Mix to coat all pieces. Marinate for 24 hours. 

Grill:
Preheat your grill to medium-high heat. Spray your grill with non-stick spray, watching your hair and face for fire up. Remove the chicken from bag, letting excess marinade drip off. Put chicken on grill and close the lid. Cook until chicken reaches and internal temperature of 165. 

Prepare Mediterranean Couscous
Follow Directions on Box

Grilled Squash and Zucchini Medley:
What You Need:
1 Medium Squash
2 Medium Zucchinis
2 Tablespoons EVOO
1 Tablespoon Greek Seasoning
2 Tablespoons Soy Sauce 

Prepare:
Chop Squash and Zucchini into 2 Inch Chunks
Place in Ziploc bag adding EVOO, Seasoning and 1 Tablespoon Soy
Marinate for at least 30 Minutes

Grill:
Using a Grill Wok, pour Squash and Zucchini inside.
Grill for 10-15 Minutes
Pour last tablespoon Soy Sauce over right before you pull from grill.

Side Salad:

What You Need:
1 Small Head Lettuce
4 Slivers Red Onion, Chopped
1 Large Cucumber, Sliced
Salami Chopped
Croutons
Dressing of Your Liking

Prepare:
Toss Ingredients Together and Serve
